Strawberry season has returned to the lower mainland and Ruby, our resident baker, couldn’t be more excited! In fact, she says it’s her favourite time of year. Everything tastes better when topped with fresh picked BC Strawberries – pies, smoothies, ice cream, yogurt… the list goes on!
To test out their culinary skills Z Mornings with Ruby, Leslie & Scooter went to Fable to learn some strawberry deserts recipes. Watch the video below!

BC Poached Strawberry Tart with Pistachio Crust Recipe
Part 1: Olive Oil Poached Strawberries
500 g strawberries
75 g icing sugar
Pinch salt
Sachet ingredients:
1 star anise
2 cloves
8 peppercorns
½ cinnamon stick
250 ml olive oil
Directions:
-quarter berries, cover with icing sugar and salt, let sit for 15 minutes
-make cheesecloth sachet with spices
-cook olive oil, sachet and strawberries on low heat for 25 minutes (until strawberries soft) and drain
Part 2: Pistachio Tart Crust
250g raw pistachios
300g raisins or chopped up preferred dried fruit
100ml maple syrup
1 Tbsp cocoa
Pinch salt
Directions:
-Blend all ingredients in food processor until they come together (still a bit chunky)
-If too dry, add a touch more maple syrup
-Roll into 1/2cm thick sheet and line tart shell – set in fridge 2 hours or overnight
Final step:
-Fill tart shell with a mixture of your poached and fresh strawberries
-Top with fresh whipped cream or vanilla icecream (or your favorite flavor)
